Robata Grill Recipes - Calamari Yaki Grilled Calamari & Halibut Aji Yaki

The robata grill is a charcoal grill used to prepare Japanese food for customers sitting around the cooking area. Its cooking method is called robatayaki.

 

Recipe #1. Calamari Yaki Grilled Calamari (robatayaki Style)

 

Ingredients

1 / 4 cup extra virgin olive oil
1 1 / 2 tbsp fresh lemon juice (1 small lemon)
1 / 2 teaspoon coarse salt
1 clove garlic, sliced
2 twigs fresh oregano, or 1 / 2 teaspoon dry
1 pound fresh squid, wash, rinse and dry well
ground black pepper

 

Cooking Direction

1. Place the whole oregano twig, garlic, salt, lemon juice and olive oil in a bowl and mix well.

2. Grill the squid in the robata grill on the lowest grill to get the maximum heat from the prepared long charcoal, then make sure that each side is on the coal for about 60 seconds to make it coking. When finished, remove the squid from the grill and cut into quarter inch rings (including tendrils). Put the shredded squid in the lemon sauce, then sprinkle the ground pepper on it, and eat it immediately.

 

Recipe #2. Halibut Aji Yaki

 

Ingredients

Four six ounce Halibut
1 teaspoon sesame
2 teaspoons peanut oil
1 pinch of red pepper slices
2 1 / 2 teaspoon high soup powder (see note)
1 / 2 cup Millin
3 tbsp natural fermented soy sauce
1 tablespoon sugar

 

Cooking Direction

1. Marinate the fish with 2 teaspoons peanut oil and sprinkle with sesame.

2. Pour the rice noodle into a mixing bowl filled with 1 / 2 cup of warm water, then mix the remaining ingredients with the rice noodle and stir well (sugar, red pepper slices, soy sauce and millilin). Reserve for future use.

3. Heat the pan on the robata grill, then fry the fish for about 3-4 minutes, turning both sides evenly brown.

4. When finished, transfer the fish to a clean plate and let it cool.

5. Pour the liquid stock mixture into the pot and boil it (make sure to use only 3-4 quarts of liquid stock mixture). Place the pan on the grill grate of the next stage of the robata grill to reduce heat, slow down the liquid mixture, and then return the fish to the pan.

6. Put the lid on the pan, cook for about 4 minutes, then turn over the halibut and cook for about 4 minutes or longer.

7. Transfer the halibut and the sauce to a clean plate, and heat it for about 5 minutes in the process of cooking the sauce. The sauce becomes thick.

8. Stir fry the vegetables, then add them to the halibut and eat them immediately.
