What Is Okonomiyaki?

Okonomiyaki(in Kanji: お好み焼き) is a Japanese salty pancake with various ingredients. The name of this Japanese pancake is a combination of two Japanese words okonomi (whatever you like) and Yaki, which means "cooked" and usually stir-fried.

Historically, Okonomiyaki recipes originated in Kansai or Hiroshima, but its amazing flavor spread quickly in Japan, and later became a household name.

Its batter and topping vary from region to region. You can even say that every chef in every prefectural Prefecture of Japan will make a unique batter and topping for his dishes. In Tokyo, they call their own Okonomiyaki pancakes barbecued meat, which is especially cooked in a semi liquid state compared to the Kansai / Hiroshima Okonomiyaki pancakes.

 

Variations

Okonomiyaki with a layer of fried noodles (udong noodles or fried noodles) is called Modan Shao. It can be considered that the term derives from the borrowed English word "modern", or it is formed by blurring the two words "Mori dakusan", which means "piled up very high" or "a lot", referring to the obvious increase of ingredients.

It also has a "light" or thinner version, known as negiyaki, which is defined as having a lot of onions in its ingredients compared to the ordinary Okonomiyaki. It is comparable to Korean pajeon and Chinese onion pancakes.
